Job Responsibilities
Lead, supervise, and oversee the South Italian kitchen, ensuring excellence in flavour, presentation, and consistency.
Create and execute authentic Southern Italian dishes, including regional specialties from Sicily, Calabria, Apulia, and Campania.
Oversee pizza production, including dough fermentation, shaping, topping balance, baking, and quality control for Neapolitanstyle and other Italian pizzas.
Develop and refine menus, seasonal specials, and signature dishes aligned with hotel standards and South Italian culinary traditions.
Manage daily miseenplace, ensuring proper preparation, freshness, and timely replenishment of ingredients.
Train, mentor, and supervise kitchen team members to uphold culinary standards and operational efficiency.
