Main Duties
- Cut, trim, debone and portion carcasses and primal cuts according to specification and production plans
- Operate and maintain cutting, slicing and portioning equipment safely and efficiently
- Inspect meat products for quality, removing defective portions and ensuring correct weights and portions
- Package, label and prepare products for storage or shipment, recording production details as required
- Follow sanitation and hygiene procedures, including cleaning and sanitizing workstations and equipment
